CoMFoRT FooD FoR A CoLD WiNTeRS Day!

 
In my quest to eat healthy and still eat food that tastes great I
came up with this awesome roasted vegetable recipe that
we make almost weekly!   It's easy to make and loaded
with good things.  I thought I would share.  It's going
to be one of your favorite recipes I promise!
 
Herb Roasted Vegetables
 
(This is what I use, but it's one of those recipes that you
can swap out things you don't like and put in things you do!)
 
4-5 Organic Potatoes - Cut into chunky pieces
1 large bag Organic Carrots
1 Organic Onion - Cut into large pieces
1 Organic Red Pepper - Cut into slices & then halved
2 Cloves Garlic
2 Bags Organic Frozen Green Beans
(Cook in microwave until just thawed)
 
(This makes a large pan that will last you a few days,
so you can cut down the recipe if you like.  We just heat it
up in the microwave and it tastes as good as the first day)
 
Throw all of your veggies into a large roasting pan -
I use the one I put my turkey in for Thanksgiving.
 
In a large measuring cup add:
3/4 cup Organic Olive Oil
2 Teaspoons Salt
1 Teaspoon Pepper
2 Teaspoons Ground Thyme
2 Teaspoons Marjoram
 
Mix oil and seasonings together well.
Drizzle over vegetables and then take a cooking
brush and stir and brush vegetables well until they're
all lightly covered with this mixture.
You want to have everything lightly covered with the
oil mixture, but not drenched in it.  Use as little
as you have to while still making sure everything's
coated.  Bake 45 minutes - take of the oven and stir
and bake another 30 - 45 minutes.
At this point it's up to you how well roasted you want
them so if you want to bake them a little longer do.
I like mine a little crispy so I usually bake another
15 minutes.
